Process: Pulped Natural
We’ve had this Brazil from the Chapada Diamantina area on hand for a while since I had a hard time finding a profile that really made it shine. It is one of the more expensive coffees we have purchased so I really wanted to get it right. Today we roasted it closely to the distributor’s suggested profile and we are excited to see what we will get from it. This is the first time I can honestly say I have no idea what to expect from it!

- Distributor’s tasting notes: “A compact flavor profile, maple walnut, sugar browning notes, and loads of bittersweet chocolate. Body, balance, and sweet. Good as espresso.”
- Varietal: Bourbon, Pacas

Due to some delays in our coffee roasting pipeline, we were short on a coffee suitable for dark roasting. So we headed over to Sweet Maria’s for some advice what they had on hand. SM is a great Oakland based company that is perfect for local home roasters. Their coffee is priced and packaged for home roasters, so its not going to be a regular supply for us but if you have any interest in coffee roasting – head over to their new shop sometime.
We dark roasted this one and it looked absolutely beautiful in the cooling tray. Can’t wait to try it… hmm, I can’t believe I just said that about a dark roast.
We will be looking at some coffees from Genuine Origin which specializes on social responsible sourcing. We may also get our hands on some really nice Guatemalans… so we will see what’s next, the future is wide open.
